One of my favorite things about oolong tea is that you'll never have a cup of Oolong from different tea masters/stores that taste the same. That's because everyone oxidizes their o olong in different ways and time. My oolong leaves were oxidized in a giant pan under an open fire right after picking on a farm in China.
