We start by making Maple Sugar from Our Barred Woods Pure Organic Vermont Maple Syrup, nothing else. These crumples are small pebbles of maple sugar that don't make it through the sifter. They can be used to provide an amazing sweet crunch as a topping for ice cream or yogurt, to sprinkle on oatmeal, or to use in baking as a muffin or pie topping. They can also be used as regular maple sugar to sweeten your coffee or tea. Our maple sugar is made only from Organic certified pure Vermont maple syrup, nothing else. You boil the maple syrup until virtually all of the liquid is evaporated, then you quickly stir to crystalize. Maple Sugar is a Healthy, Low Glycemic Index Sweetener. The production of natural maple syrup is much friendlier to the environment than cane sugar production.
