Will Teetzen says the superior flavor comes from using a wood fired evaporator to slowly cook down the maple syrup, caramelizing and concentrating the flavor. Most commercial operations use reverse osmosis to remove the water content from the sap, an energy efficient method that sacrifices flavor. The Teetzen family does things the old fashioned way- cutting and hauling their own wood to fuel the sugar shack. The high quality glass bottles make this maple syrup a great gift idea! Storage: Opened containers should be stored in the refrigerator, where they will last up to 6 months. Unopened containers are shelf stable at room temperature.
