Grapes: 100% Chardonnay Production: Short pruning. Green harvest in July. Soft pressing. Fermentation at 10-11°C. Matured on lees for seven months with weekly pumping over. Bottled in April and aged for two years. Tasting Notes: Bright straw colour with greenish highlights. Intense aromas of fruit and fresh flowers with a finish of aromatic herbs. Crisp and savoury palate with notes of iodine, saltiness, and acacia honey. Pairings: Served best with starters made with fish and molluscs, raw fish, charcuterie, and fresh/mild cheeses. Serving Suggestions: Serve at 12-13°C in crystal glasses. Show more
