Organic Red - Cabernet Franc, Merlot and Syrah - 12,5% vol - 986 hand numbered bottles Maceration begins at a low temperature (15°C) to encourage the extraction of the grape’s arom atic compounds. The wine remains in contact with the skins for about 14 days, until the end of alcoholic fermentation. This is followed by a temperature increase (around 20°C) to promote the extraction of tannins and colour, as well as the onset of malolactic fermentation. Both fermentations take place in temperature-controlled stainless steel tanks. Margot Terrazze is then aged for 15 months in 750-litre French oak barrels. Show more
