While the vast majority of the Haisma bottlings are Burgundy, this AOC Cornas is a testament to the skill of the winemaker. This wine is vinified with native yeast ferments, a heal thy helping of whole cluster work, and a long (and cold) fermentation. The resulting wine is deep black bramble fruits, espresso, thyme oil, and cracked peppercorns. Given time the wine opened to dried rose petals, graphite, and white pepper oils.
