Meet Savatiano – Greece’s most planted grape. You’ll usually see Savatiano made into “Retsina”; the infamous Greek wine infused with pine sap to create a sweet, yet weirdly salty w ine (it’s not our favorite). But this winemaker ditched the pine sap and created a white wine with perfectly balanced acidity and mineral undertones.
