Rufo is a natural white wine made from 100% Macabeo grapes in Roussillon. The winemaking combines two methods: half the grapes undergo direct pressing while the other half experien ces skin contact for 4 days. After spontaneous fermentation with indigenous yeasts, the wine ages on lees in both concrete tanks and 500L barrels for 8 months. This unique process creates a fresh, crisp wine bottled without fining, filtering, or sulfites. Pairs well with sushi and smoked dishes. Show more
