How We Make Them It starts with fresh pineapple, blended and slow-cooked gently for hours until the natural sugars caramelise and the jam reaches its perfect point. Deep golden, fragrant, and never too sweet. Once ready, the jam is cooled and rolled by hand, individually, for every single tart. The pastry is made fresh for each batch. Real butter, worked by hand, rolled out and cut piece by piece. Each piece is egg washed by hand, then goes into the oven twice. The pastry is baked first, then baked again once the jam is on.
