The best way to ensure a smooth, creamy bowl of matcha is to sift the powder before preparation: even though it's made of fine particles, static can cause them to clump together. T his simple, stainless steel tool is the solution. Rest it on the rim of your tea bowl, and use a chashaku to add matcha, running the back of the scoop against the mesh to push all the powder through.
