The Matsato Osuren Chef's Knife is the brand's premium chef's knife. The defining feature is a precision index-finger control hole integrated into the blade near the bolster. This hole allows the user to place their index finger through the blade for a pinch grip variation that gives greater control and directional precision on each cut. The 6.3-inch blade is made from Japanese stainless steel that has undergone cryogenic hardening — a cold treatment process that increases blade density and improves long-term edge retention compared to standard heat treatment. Like the Classic knives, it features a roasted beechwood handle. The Osuren is designed for experienced cooks who want a more precise, technique-oriented cutting experience. Key facts: 6.3" blade · index-finger control hole (unique feature) · cryogenically hardened Japanese stainless steel · roasted beechwood handle · premium tier · improved edge retention Show more
