A couple of tricky vintages led him to source some négociant fruit, but he is now firmly back with his focus on Burgundy. Crotet leans towards a natural approach in the cellar, using zero additives unless absolutely necessary. Fermentations take place in small tanks before the wines are transferred to small, mostly neutral barrels for eight to ten months. The reds are fermented whole bunch, with a touch of carbonic maceration to help the fruit really sing. Tiny amounts of sulphur are added at bottling, purely for stability. In recent years the reds have become even more ethereal as he refines and homes in on the house style. All of Maxime’s wines are energetic, with drinkability at the fore. Yet, they are terroir-driven and, crucially, offer incredible value without ever compromising on quality. Yes, you read that right.
