Produced in northeasterrn Italy from the raw cow's milk from both the low-fat morning and higher-fat evening milkings, Grana Padano is partially skimmed, cooked twice, then bat hed in brine before it's left to age. The resulting rind is firm, waxen, and deeply straw-colored, with a fragrant, dry, interior that's sweet and nutty. Grana means ''grain'' and, as the name implies, the cheese has a fine granular quality with a sweet, nutty little bite. This one's aged for at least 20 months. Show more
