Named for the blustering, westerly winds that blow across this island where this cheese is made, Roaring Forties Blue is full flavoured pasteurized cows' milk blue from Austral ia's King Island. A rindless cheese matured in pitch black wax helps this cheese retain its moisture, creating a smooth and creamy texture. A Roquefort style mold is used to impart lingering punch, which melts away to distinctly fruity, pear-like tanginess. From the lush green pastures of the island, where the cow's graze, a distinct grassy, nutty flavor is imparted into the cheese, a flavor great with a New Zealand Sauvignon Blanc. Show more
