Winemaking Method and Maturation: Grapes ar e harvested in the late morning. Higher sugar levels were used for this production to ensure enhanced guava flavours. Only free run juice was selected. The juice had no skin contact, to ensure that it is fresh with no-over ripe characters. The juice was fermented at an average temperature of 15 - 16 degrees to ensure dominant flavours of guava.
