The Nuova Simonelli MDXS commercial espresso grinder gives cafés a choice of three workflows on the same 65mm burr platform: Doser, Doser with Shutoff, and On Demand Digit. All thr ee use micrometric grind adjustment, a commercial die-cast body, a large hopper, and sound insulation. The key decision is whether coffee should be held in a doser chamber or ground directly into the portafilter for each order. Best fit: small to medium coffee shops, restaurants, bakeries, and mobile coffee operations needing a durable primary or secondary espresso grinder. Choose the right MDXS configuration Configuration Workflow Best fit MDXS Doser Grinds into a chamber; the barista dispenses grounds with the doser lever Traditional high-throughput routines where coffee is staged for service Doser with Shutoff Automatically stops grinding when the doser chamber is full Teams wanting a filled chamber without accidental overfilling On Demand Digit Grinds programmable doses directly into the portafilter Specialty cafés prioritizing fresher per-order dosing and recipe control Commercial grinder features 65mm stainless-steel burrs: sized for commercial espresso service and repeatable particle production. Micrometric adjustment: allows small grind corrections while dialing in. Sound insulation: reduces grinder noise in customer-facing environments. Portafilter holder: supports a hands-free grinding workflow. Large hopper: approximately 1.6 kg capacity reduces refilling during service. On Demand controls: the Digit configuration adds programmable doses, display controls, and an illuminated work area. On-demand grinding prepares each programmed dose when the order is placed, which usually matches a modern specialty-coffee workflow and simplifies recipe tracking. The right choice depends on service style, staff training, peak demand, and how long grounds would sit before use. Whichever configuration you choose, verify dose weight with a scale, purge after meaningful grind changes, and document opening dial-in procedures. Nuova Simonelli MDXS Commercial Espresso Grinder buyer guide and original FAQs The MDXS is a compact Nuova Simonelli commercial platform offered here in multiple workflows: doser with shutoff, doser, and On Demand Digit. Variant choice changes how coffee moves through the bar, so it is more important than a minor finish selection. Best-fit decision The official family uses 65 mm flat burrs and is positioned for lighter daily production than the MDJ. It is a sensible match for cafés, restaurants and offices that need commercial construction without purchasing unused high-volume capacity. Comparison shortcut Choose a doser variant when batch grinding and mechanical portioning match the service plan. Choose On Demand Digit for coffee ground per order; compare the MDJ if sustained rushes justify a larger platform. Before ordering Select the workflow variant deliberately; do not assume every MDXS operates on demand. Estimate consecutive drinks during the busiest window and allow growth headroom. Measure the tall hopper installation and provide access for cleaning. Related research: Nuova Simonelli MDJ; Nuova Simonelli DUO; Nuova Simonelli Mythos; commercial grinder collection.
