Lepidorhombus whiffiagonis - Caught in South West Waters This left-eyed flatfish has undergone something of a makeover recently, increasingly being found under the label ‘Cornish sole’, which is a much cooler name than megrim – another name for ‘migraine’ – or its nicknames of ‘whiff ’ and ‘fluke’. Insults continue to fly in other languages – fishermen in Boulogne in France call it salope, which is a pejorative term, yet it’s very popular in France and Spain. Taste description Megrim is uniformly bright white in colour with a deeply savoury, vegetal taste. In common with many flatfish, this flavour is most pronounced on the bottom thinner fillet, which carries an additional earthy element. The flavour profile is reflected in the aroma too. After an initial burst of moisture, the flesh gives a fairly dry mouth feel with a texture that is more fluffy and lightly fibrous than flaky.
