RECIPES MERINGUE FROSTING Syrup: Boil 150ml of water with 420g (2 cups) of refined sugar for 2 minutes or until sugar melting point. Meringue: Beat at high speed in a 5-quart mixer, 200ml of water with 65g (6 tbsp) of ENCO Meringue Powder for 3-4 minutes. Add syrup and continue beating at high speed for another 3-4 minutes or until it reaches the desired consistency. We recommend to apply the frosting immediately and not store it, keep your cake with a topper to maintain the creaminess of your merengue. BAKED MERINGUES Prepare Meringue Frosting (SEE RECIPE ABOVE) and form the meringues on a tray with parchment paper. Bake them for 1 hour and 10 min at 230°F until they are firm (if they are bigger they will require extra time). Turn off the oven and let them sit on the inside for 20 more minutes to finish hardening. Let them cool and store them in a tightly closed container to prevent them to become taffy. ROYAL ICING Mix 3 tbsp of ENCO Meringue Powder, with 6-7 tbsp of water and 3 cups of powder sugar (previously sift) until you get a paste. BUTTERCREAM Measure 3 cups of butter-cream frosting and put in a mixing bowl. Add 1 tbsp of ENCO Meringue Powder and mix together. CREAM CHESSE FROSTING Measure 2 cups of powder sugar and put in a mixing bowl. Add 1 cream cheese (190g) and 1 tbsp of ENCO Meringue Powder and mix together.
