Respect starts with organic and biodynamic farming principles, eliminating synthetic fertilizers, herbicides, andfungicides, and using only their own cow manure and biodynamic preparations made from plants growing on the property. The same philosophies that are used in the vineyards are also applied in the winery: “Let the wine make itself. The wine doesnot need commercially bought additives. In doing so, you are not honoring how the grapes are grown, their vintage variation, or sense of place," says Dan. Of the 132 allowable additives, only a small amount of sulfur is used in winemakingprocess, and only right before bottling. Both the Syrah and Pinot see a good portion of whole-clusters, are punched down by foot, and age in barrels of various ages before being bottled by hand, without fining or filtration. Show more
