The secret to the Swiss Water Process is using “flavour charged” water to allow the caffeine in the beans to diffuse into the water. “Flavour charged” water is created by soaking a batch of coffee beans in water for approximately 8 hours after which time the caffeine and coffee flavours from these beans have all leached out into the water.
