Medium Roast Comalapa Region EL TUCAN – Strictly High Grown EP Aguila At Firecrest we were determined to find a decaf bean which, when roasted with our sustainable methods, produced a coffee brew that was brimming with flavour. So many decafs are somewhat bland and characterless but we really struck gold with this one – our El Tucan Mountain Water Washed grown in the Chiapas State, one of the oldest coffee growing areas in Mexico. This area of Mexico is where the Sierra Madre Chiapas mountains cross the region creating various microclimates and soil types. The coffee trees are planted at an altitude of 100 – 1600 masl, where smallholder farmers use only traditional methods for wet hand-pulping and fermenting the coffee beans then drying then on small backyard patios. The beans are decaffeinated using the Mountain Water Process, which uses pure water from the Pico de Orizaba (the highest mountain in Mexico). The process begins with a chemical analysis to determine optimal conditions, then the beans are gently steamed and prepared for extraction. The extraction process uses a water-based saturated solution that removes the caffeine whilst retaining the coffee’s flavour compounds.
