This coffee comes from Pocitos, a 40-hectare farm in Cosautlan, Veracruz, belonging to the Valdivia family. Carlos, a fourth-generation coffee farmer, is the estate manager. Carlos and the team hand-pick the ripest coffee cherries and transport them to the mill, where they're floated to remove defects. The cherries are dried on raised beds for 20-30 days to a 10-11% moisture level. The result is a sweet, smooth cup with flavors that remind us of ripe red fruit and brown sugar. Show more
