Our Mezzi Rigatoni is a shorter tube shaped pasta made from Senatore Cappelli, a heritage wheat prized for its naturally rich flavor and high fiber content. We mill it semi-whole t o preserve the grain's character, then dry it slowly for over 30 hours. The ridged tubes are built for heartier meals because they hold a firm al dente bite that doesn't go soft. Think ragù, pasta al forno, and roasted vegetables.
