The latest creation from Maine maker Nick Rossi is full of character, utility, and versatility: a mighty, mid-size chef's knife that will fit perfectly in any kitchen, large or small. Forged of vintage wrought iron layered over 15n20 and 1084 carbon steel damascus, the 186mm / 7.3" blade features a tough, stiff spine that tapers from 4.4mm above the choil to 1.5mm an inch from the slim, pointed tip, providing both strength and precision for every cut. The tang emerges from the handle with a rustic, forged finish which continues along the blade's flats beneath the spine, and also downward where Nick's bevel shaping begins with an elegant plunge transition, creating extra surface area down the choil that makes for a particularly comfortable hold in the pinch grip. The bevel geometry, as expected of Nick's work, is superb, slimming with wonderfully honed convexity to a very thin, hard, and sharp edge. With a balance point just in front of the handle, this quick, nimble, yet weighted blade and razor-sharp edge offer both efficiency and finesse on the cutting board. A beautiful western style handle is made of stabilized Maine maple wood and features a pair of stainless steel pins, a single green G10 pin, and matching green frame visible along the top, back, and underside.
