A certified organic, wild fermented Sangiovese/Syrah from local winemakers, Minimum Wines. With a strong fruit flavour packed with cherry and a smooth finish, this wine is the perf ect people-pleaser and a staff favourite. Minimum’s 2021 Sangiovese/Syrah is 100% wild fermented and unfined. Wild fermented on full skins in stainless steel tanks before transfer to old oak vessels. Barrell-aged for 10 months, with a further month of bulk fermentation.
