MondoStart Surface, 5g A pure-mould culture which is used to quickly produce a safe protective surface mould. This culture can be used in combination with MondoStart 2M. Product is dipped into or sprayed with a water/mould solution made from non-chlorinated water and a measured amount of MondoStart Surface before hanging/fermentation/drying. Warning: Any cooking process can kill the surface mould. Surface moulds SHOULD NOT be used in combination with fibrous casings as they will breakdown the casing (Collagen or Natural casings should be used instead.)
