The fruit is hand-harvested from old organic vines grown on the steep slopes of the Colli Trevigiani hillsides. Spontaneous fermentation relies entirely on native vineyard wild yeasts in concrete tanks, intentionally bypassing the second fermentation typical of Prosecco. The liquid ages on its fermentation lees for eight months in concrete and is bottled entirely unfined and unfiltered. It pours a pale straw hue, releasing clean aromatics of green apple, fresh pear, white flowers, and wild herbs. On the palate, a light-to-medium body is bone-dry and exceptionally crisp, focusing on a linear fruit presentation. A vertical wave of vibrant acidity runs through the center, keeping the fluid mouthfeel thoroughly refreshed. The short lees contact contributes a subtle texture that frames the mid-palate cleanly. It concludes with a clean, lightly savory finish.
