Morbier Cheese The Facts Country: FranceMilk Type: Unpasteurized CowAge: 4-6 Months Tasting Notes: Morbier cheese was originally made from the left-over milk of Comte cheese, and w as made partially at night and partially in the morning. The original makers would only have enough milk at night to make half the cheese, so they would rub it with ash to preserve it until the next day, when they were able to fill the rest. This would create the beautiful streak of ash seen in the centre of the cheese. Today, however, the cheese is made all at once, but still features the ash. This cheese features a strong, earthy, mushroom-like flavour, with a fairly strong aroma. Pair with a Pinot Noir or a Gewürtztraminer. Show more
