The hand-harvested grapes are pressed slowly and undergo a completely spontaneous fermentation driven by native wild yeasts in neutral vessels. The liquid matures undisturbed on its fine fermentation lees inside old wooden casks to encourage natural structural harmony. It displays a bright gold hue, releasing a complex nose of ripe pear, yellow plum, chamomile, and warm spice. On the palate, the full-bodied framework balances a rich, waxy texture with a sharp line of mountain acidity. Savory flavors of walnut shell and dried herbs seamlessly wrap around a texturally detailed, dense mouthfeel. A strong vein of maritime salinity cuts through the center, keeping the profile fresh. It finishes long, dry, and highly complex.
