All things to all dishes and cocktails. Salt-cured and barrel-aged. “If you're looking to elevate your dishes with minimal effort, If & When's Preserved Lemon Paste is a must-have.” — Chef Jeremy Fall (@jeremyfall) Usage Tips In small quantities, If & When balances the flavor of every other ingredient in a recipe, making each a better version of itself. Measure with a teaspoon or to taste. The longer If & When rests on raw meat, fish and vegetables before cooking, the stronger the flavor and the less you need. Spread Toast, sandwiches and wraps Mix Salad dressings, marinades and cocktails Marinate/Rub Meats, poultry, fish and vegetables before cooking What Makes It Different Moroccan Preserved Lemon is a rub for raw meat, fish and vegetables; an essential baking and cocktail ingredient that moonlights as a cheese pairing. Savory & Sweet For savory dishes, Moroccan Preserved Lemon shines in tomato-based broths, braises and tagines, adding complexity to all the other ingredients. If & When also adds a floral note to soft cheeses like ricotta (start with a teaspoon) and deepens when mixed a day in advance. In desserts, the Moroccan blend replaces lemon juice and zest, adding umami from spices. When marinating fruit with sugar and preserved lemon, you can often reduce the sugar called for in the recipe, since If & When draws out the fruit's natural sweetness.
