Munster is a strong, washed-rind cow's milk cheese produced in the regions between Franche-Comté, Alsace and Lorraine. Soft, creamy and high in fat, it is flavoured by high mountai n meadows, and makes an excellent cooking cheese. Red wine's dark, fruity acidity cuts through and compliments the unctuous savour of Munster, so a full-bodied red is the best partner.
