Chaga (Inonotus obliquus) is a parasitic fungi found only on birch trees. Harvested when it is immmature, chaga does not have a fruiting body, rather it is a mass of mycelium and b irch wood that protrudes from the tree like a burl. It has an earthy caramel, mocha flavour and is rich in antioxidants, beta-glucans, polysaccharides, sterols and betulinic acid. This has made it a popular medicinal fungus.
