The notion that everything is connected, above ground and below, finds a strange and vivid home in the metallic strands of bladesmith and metal artist Nick Anger's mycelium damascus. Forged by hand from the nature-inspired damascus pattern are two contrasting and complementary profiles that pair to form a singular heirloom chef's set unlike any other. Thin, light, fast, and flexible, the Western-inspired chef knife boasts a 243mm / 9.5" blade standing 63mm tall on the cutting board. Especially thin at the edge beneath a steadily tapering spine, it is built for long, delicate cuts of a wide variety. Anger's subtle compound S-grind geometry dissipates toward the tip to maintain mass where needed while ensuring balance, toughness, and friction reduction in the rear, where large ingredients and big cuts are welcomed. Rigid in the rear third, the blade becomes increasingly flexible through the forward inches, a slim pointed tip positioned for detail work. The hand-filling knife balances just at the choil. Balancing an inch ahead of its 82mm heel, the vegetable cleaver moves steadily and with authority, its razor-sharp edge and weight guiding it through ingredient after ingredient, meal after meal. Robust enough for the densest foods and biggest cuts while precise enough for everything else, Anger finds superb balance in the final 196mm / 7.7" edge. The bevels are tall and subtly convex, leading to a slim tip for dexterity, the large faces presenting a grand canvas through which to view the one-of-a-kind damascus. Each knife features forged integral bolster construction, the steel's alternating layers visible from every angle where blade meets handle. Damascus then meets rings of black micarta before matching, sculpted handles of pale moon ebony complete each build. Together, a Nick Anger set unlike any other.
