In 1905, his descendant Alberto Pacas discovered a natural mutation in some of the plantation's trees. The newly discovered mutation met all criteria of fine flavour coffee: rich with apricot, hazelnut, cacao flavour notes, low in acidity, with a sweet, lasting aftertaste.
