The brewers wondered what would happen if they continuously exposed sake yeast to vario us types of LED light. The resulting yeast mutation gives this junmai ginjo a delightfully complex profile, featuring an aroma reminiscent of tropical fruit and candied nuts, a juicy body with notes of apple and yogurt, and a clean, dry finish.
