All separate fermentations for each grape in a mix of stainless steel and ceramic egg. Semi carbonic maceration in pressed juice, with each wine being pressed back out into its fermenting vessel to age on lees over the winter. The final assemblage was made in the spring. Rosé in style, leaning towards rusty-orange in colour. Nazomi offers tons of character and complexity to enjoy. Salted fruits on the nose combine with a good punch of acid in the mouth. Full in structure for a rosé, with a hefty dose of salinity and a pleasant bitterness reminding us of fruit leather or cooked rhubarb.
