This French pattern chef knife is forged from 80CRV2, then the bevels are ground on a curved platen to simulate the hollow grind of a twelve-foot diameter wheel. This gives it ligh t weight and a thin edge for effortless cutting. The blade is finished with a forced patina treatment that will continue to grow along with the knife over the coming years. The handle is made from re-purposed bourbon barrel staves attached with domed copper pins.
