One of our best sellers, and the bag I reach for when I want to pay attention to what I'm drinking.Why it tastes like thatSitting just below the Nyungwe Forest, the area gets a cool climate, heavy rainfall, and volcanic soil. Cherries there ripen so slowly they're among the last picked in Rwanda each season, and slow ripening is what concentrates sugar and builds complexity in the bean. Fully washed means the fruit is stripped before drying, so you taste the coffee itself rather than fermented fruit around it. Clean and precise rather than wild.Light roast, and what that means for youLight roasts keep the origin character that darker roasting burns off, which is why you get plum and tea here instead of generic roastiness. The tradeoff is that they're less forgiving. Light-roasted beans are denser and need hotter water and a slightly finer grind to extract properly. Brew it like a dark roast and it'll taste thin and sour, and that's the brew, not the coffee.How to brew itPour-over is where this shines. Grind medium-fine, water at 205°F, 1:16 ratio, about 20g coffee to 320g water. If it tastes sour, grind finer or brew hotter. If it tastes bitter and dry, go coarser. French press grind is available if that's your setup, though you'll lose some of the clarity.One thing to knowNew Light is a rotating series of light-roasted East African single origins.
