Scaletta means "small ladder" and the name refers to the back and forth curling of the dough which occurs when the loaf is formed, giving the Italian baked bread its distinctive shape. Each loaf is hand rolled, curled, split, and then slowly baked directly on the oven hearth. The result is a rich, thick crust and a complex fiber-like texture.
