Nishide Shuzo brews up this special batch of junmai daiginjo using a unique yeast that was discovered one hundred years ago, hence the name “100 Year Sake”. This yeast, called kura tsuki kobo (house yeast), only grows within the grounds of the brewery itself. In fact, breweries that have been crafting sake for generations sometimes take pride in their specific yeast. What does this mean for you?
