From Western Australia's Great Southern region, Nullaki has quietly developed a reputation for producing elegant, fruit-forward whiskies that let both spirit and cask speak clearly. Their Tawny Cask release draws on one of Australia's great fortified traditions, marrying rich red fruit sweetness with the distillery's bright, cereal-driven spirit to create a whisky that is generous without becoming heavy. They deliberately build around Western Australian ingredients and casks. This one matures in barrels that previously held 20-year-old Swan Valley tawny, while the distillery itself sources barley and casks from across WA wine regions. This isn't whisky made in Western Australia. Its whisky made from Western Australia Nose:Dark cherries, stewed plums, caramel and soft baking spice. Palate:Raisins, figs and caramel syrup with hints of orange peel and gentle oak. Finish:Long and warming with lingering dark fruit, spice and a soft port sweetness.
