It is a versatile and nutritious ingredient, used in many vegetarian and vegan recipes as it has a tasty, cheese-like flavour. Nutritional yeast flakes are produced through the fermentation of the species Sarrcharomyces cerevisiae on molasses. Additional nutrients (including folic acid) are added to the live yeast during a second fermentation step. It is harvested, washed, “inactivated” and rolled into dried flakes.
