Our darkest coffee is made up of 100% arabica beans from a single origin in Central or South America depending on the season. This is so that we can source the freshest beans when they become available after harvest. The beans are roasted to what we like to call “ultra-dark” meaning the darkest that we will roast without sacrificing the flavors that occur naturally and are inherent to the coffee. Instead of flash roasting like many commercial roasters, we carefully develop our dark roast to achieve color and character resulting in a tasting experience that is smooth, not bitter, with notes of deep rich chocolate and balanced smoke. This coffee’s dark color and smooth finish is what inspired the name “obsidian” like the black, smooth, glass-like finish of the volcanic rock used to make pre-historic artifacts throughout Central and South America.
