100% Cabernet Franc | Varna Region, Bulgaria Tommy sampled this in January at Още вино, a brilliant little wine bar in central Sofia, this Cabernet Franc made such an impression we had it exclusively imported for our shelves. Grown between two lakes in the village of Tzonevo, the 10-year-old vines thrive in leached cinnamon forest and alluvial soils with a sunny south-southeast exposure. Handpicked grapes are cold-macerated for seven days before a wild fermentation in small open-top fermenters. Gentle daily punch-downs and pump-overs coax out a soft, layered profile. The wine is aged for 8–9 months in Bulgarian oak, then matured for another 8 months in stainless steel. Unfiltered and low intervention, it’s full of character and a true expression of place. Tasting NotesBright and elegant, with notes of dark cherry, wild herbs, and blackcurrant leaf. Silky tannins and a savoury edge lead to a long, clean finish.
