The symbol of the premises of the Odyssey, the first stop beyond Avize, and the moment the journey truly begins. Olivier Bonville discovered in Pierre Déthune of Ambonnay a vibrant, refreshingly pure expression of Pinot Noir that he knew would be the perfect counterpoint to his own chalky Chardonnay from Avize. The Rosé is assembled from 90% Chardonnay (Avize Grand Cru, 2018 base) and 10% Pinot Noir (Ambonnay Grand Cru, 2015), two Grand Cru terroirs at opposite ends of Champagne's finest villages, brought together in a single harmonious expression. An invitation to the senses, and a foretaste of the adventure to come. Tasting notes: Freshness and lightness at first nose. A sweet palette of raspberries, redcurrant and hazelnuts appears alongside citrus notes. On the palate: fresh and well-balanced, tending to a pure and long finish. Food pairing: A natural aperitif with real charm. Also excellent with salmon, tuna tartare, red fruit desserts and summer dishes on the terrace.
