When young it is fresh-tasting with lemony acidity b ut as it ages and breaks down, it becomes complex and savoury. If you are looking for the perfect cheese to pair with your pinot noir, this is it. STYLE Soft, pinot-washed rind wrapped in vine leaves TALKING POINTS Washed in Pinot Noir and wrapped in pinot-soaked and brined grape vine leaves. Strong funky flavours, fudgy texture when young, runny when very ripe. Oen stems from the word ‘oenology’ which is the study and science of wine making. Because much of Oen’s flavour is developed through its maturation techniques, we tend not to see a huge amount of seasonal variation. Younger cheeses are clean, lactic and lemony while cheeses that are allowed to mature to 6–8 weeks are robust, savoury and super complex.
