Its name is often translated as “colourful variety”, referring to the wider family of Anxi oolongs beyond the better-known Tie Guan Yin. Where some oolongs are bold and roasted, SE Chung is lighter, fresher and more subtle. It offers a calm, elegant cup that rewards slower drinking. How to Brew SE Chung Oolong Loose Leaf Tea Use water at around 85°C to 90°C. If using a standard kettle, allow freshly boiled water to cool for a minute or two before pouring. Add one heaped teaspoon per cup and steep for 3 to 4 minutes. Choose three minutes for a lighter, more floral infusion, or four minutes for a slightly fuller cup with more nutty depth.
