Barley is rich in vitamins, minerals, and fiber, all of which enhance heart and bone health and can reduce inflammation, among many other benefits. In fact, fiber is found througho ut each kernel of barley, not just in the outer bran coating, so it has the lowest glycemic index of any grain.In adition, barley is rich in beta-glucan fiber, which studies have shown to reduce low density lipoprotein (“bad” cholesterol). It also has a different gluten structure than wheat, so many people with gluten sensitivities find it easy to digest. We run our certified organic barley whole barley through our hot roller/flaker to create easy-to-use whole-grain flakes that are a hot breakfast similar to oatmeal, but with a more pleasant "chewy" texture and a slightly sweeter flavor. They are also great for brewing! Basic Recipe for Barley Flake Hot Cereal Put Barley Flakes and water in a heavy pot, using a 1 to 2 ratio. (In other words 1 cup of flakes to 2 cups water, or other amounts in a similar proportion. You may increase the water to 2.5 for a creamier porridge.) Add a pinch (or more) of salt, and/or a tablespoon (or more) of butter. Optional additions while cooking: raisins, craisins, or other dried fruit After the mixture comes to a boil, reduce heat, cover, and simmer for 15-20 minutes or until most of the water has been absorbed. You may let the hot mixture sit in the pot off the flame for a while for more liquid to be absorbed. Serve with honey, yogurt, or whatever you like! Show more
