This is a big, hard-working muscle that yields characterful steaks with bags of flavour and plenty of bite. In texture, they're a bit like rump steak. Because chuck steaks are cut from a single muscle, they hold their shape and structure as they cook. They have a delicate marbling of sweet fat that melts away, revealing the open texture of the meat.
