How to Cook Organic Grass-Fed Beef Cheeks: Slow Cooking for Maximum Flavor Our Organic Grass-Fed Beef Cheeks are a tender, flavorful cut when cooked low and slow. Perfect for braising, beef cheeks absorb flavors beautifully and melt in your mouth when cooked properly. Why Slow Cook or Braise Beef Cheeks? Beef cheeks are a slow-cooking cut because: Dense Muscle Fibers: As a working muscle, beef cheeks have a tight structure that requires time and moisture on low heat to soften. Collagen-Rich: Slow cooking breaks down the collagen, transforming it into gelatin for a silky, tender texture. Flavor Absorption: Braising allows the beef cheeks to soak up the flavors of the liquid and seasonings. Slow cooking or braising ensures this unique cut becomes tender, rich, and deeply flavorful. Recipe 1: Clean, Allergy-Friendly Braised Beef Cheeks Ingredients: 2 Organic Grass-Fed Beef Cheeks (13–16 oz each) 2 cups beef or vegetable broth (homemade is best or low sodium, no additives) 1 large onion, sliced 2 cloves garlic, minced 2 large carrots, peeled and cut into chunks 2 celery stalks, cut into chunks 1 teaspoon dried thyme (or 2 sprigs fresh thyme) 1 teaspoon dried rosemary (or 1 sprig fresh rosemary) 1/2 teaspoon salt (adjust to taste) 1/2 teaspoon black pepper Instructions 1. Prepare the Beef Cheeks Pat the beef cheeks dry with paper towels and season lightly with salt and pepper. 2. Add Ingredients to the Pot Place the onion, garlic, carrots, and celery in the bottom of your slow cooker, Dutch oven, or Instant Pot. Add the beef cheeks on top, then pour in the broth and sprinkle with thyme and rosemary. 3. Choose Your Cooking Method Slow Cooker: Cook on Low for 8–10 hours or High for 5–6 hours, until the beef cheeks are tender. Stovetop (Dutch Oven): Bring the pot to a boil over medium-high heat, then reduce to a low simmer. Cover tightly and cook for 3.5–4 hours, stirring occasionally to ensure the liquid doesn’t evaporate. Add broth as needed. Instant Pot (Pressure Cooker): Secure the lid and set to High Pressure for 50 minutes. Allow a 10–15 minute natural release, then quick release any remaining pressure. 4. Serve Serve the beef cheeks with the vegetables and cooking liquid as a light broth. Pair with steamed vegetables, mashed potatoes, or quinoa for a nourishing meal. ______________________________________________________________Recipe 2: Italian-Style Braised Beef Cheeks with Red Wine Sauce Ingredients: 2 Organic Grass-Fed Beef Cheeks (13–16 oz each) 2 tablespoons olive oil (optional, for stovetop searing) 1 large onion, finely diced 2 carrots, finely diced 2 celery stalks, finely diced 2 cups beef broth (homemade is best or low sodium, no additives) 1 cup dry red wine (e.g., Barolo, Chianti, or Merlot) 1 (14 oz) can diced tomatoes 1 tablespoon tomato paste 1 teaspoon dried thyme (or 2 sprigs fresh thyme) 1 teaspoon dried rosemary (or 1 sprig fresh rosemary) 1 bay leaf Salt and pepper, to taste 1 tablespoon unsalted butter (optional, for sauce finish) Mashed Potatoes: Serve over creamy mashed potatoes (recipe below). Also works beautifully with polenta or risotto. Instructions 1. Prepare the Beef Cheeks Pat the beef cheeks dry with paper towels and season lightly with salt and pepper. 2. Build the Braising Liquid Combine onion, carrots, celery, beef broth, red wine, tomatoes, tomato paste, thyme, rosemary, and bay leaf in your cooking pot or slow cooker. 3. Choose Your Cooking Method Slow Cooker: Add the beef cheeks to the slow cooker and pour the braising liquid over them. Cook on Low for 8–10 hours or High for 5–6 hours, until the beef cheeks are tender. Stovetop (Dutch Oven): Add the beef cheeks to a large pot with the braising liquid. Bring to a boil over medium-high heat, then reduce to a low simmer. Cover tightly and cook for 3.5–4 hours, stirring occasionally and adding broth if needed to prevent drying. Instant Pot (Pressure Cooker): Add the beef cheeks and braising liquid to the Instant Pot. Secure the lid and set to High Pressure for 50 minutes. Allow a 10–15 minute natural release, then quick release any remaining pressure. 4. Finish the Sauce Remove the beef cheeks from the pot. Strain the braising liquid or blend the vegetables into the sauce for a smoother texture. Simmer the sauce on medium heat to reduce and thicken slightly. For added richness, stir in 1 tablespoon of butter before serving. 5. Serve on a Bed of Mashed Potatoes Spoon the sauce over the beef cheeks and serve on a bed of creamy mashed potatoes. Garnish with fresh parsley. Creamy Mashed Potatoes Recipe Ingredients: 2 lbs Yukon Gold potatoes, peeled and cubed 1/2 cup milk or cream (adjust for preference) 3 tablespoons unsalted butter Salt and pepper, to taste Instructions: Boil potatoes in salted water until fork-tender, about 20 minutes. Drain and mash with butter, milk, salt, and pepper until creamy. Adjust consistency as needed. Benefits of This Recipe Rich and Luxurious: Perfect for special occasions or a cozy dinner.
